Ingredients

  • 1 cup boiling water
  • 1 cup bulgur wheat
  • 1/2 teaspoon salt
  • some tasty additions (anything you want, really!)

Our favorite combo:

  • 1/4 dried figs, chopped
  • 1/4 dried apricots, chopped
  • 1/4 cup pistachios, chopped
  • 1/4 cup of chopped parsley
  • 1 shallot, chopped and sauteed
  • juice of 1/2 a lemon

Instructions

  1. Place the bulgar and salt in a mixing bowl. Add boiling water, stir, and cover tightly with plastic wrap. Let sit for 15 minutes.

  2. Chop up additional ingredients while bulgur sits. Add chopped ingredients and lemon juice to bulgur, stir to combine.

  3. Eat!
