Ingredients

  • 1/2 yellow onion, diced
  • 4 ounces mushrooms, sliced
  • 8 ounces ground breakfast sausage or turkey sausage
  • 8 large eggs
  • Salt and pepper, to taste
  • 1/2 cup cheese of choice, (we use a mix of mozarella and gruyere)
  • 1 cup spinach

Instructions

  1. Preheat oven to 375 degrees F.

  2. In a large skillet, brown sausage and transfer to quiche pan, leaving excess grease in skillet.

  3. Add onion and mushrooms, season with salt and pepper and cook until soft. Add a small amount of butter or olive oil if pan is too dry (ie not enough sausage grease).

  4. Add the spinach and wilt slightly. Transfer onions, mushrooms and spinach to quiche pan.

  5. In a large bowl, whisk together eggs, milk, salt and pepper. Stir in cheese. Pour the egg mixture over the sausage mixture in the pan. Mix to combine evenly.

  6. Bake for 40-50 minutes or until egg is no longer runny in the center. Cut into pieces and enjoy!
