Nut Brittle
Ingredients
- 3 cups raw nuts (peanuts, cashews, pecan, walnuts or almonds)
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups sugar
- 1 cup light corn syrup
- 1/2 cup water
- 1/4 cup butter, melted
Instructions

Spread nuts onto baking pan to roast in oven at 350 degrees F. Note: Nuts roast at different times. Peanuts are typically 15 minutes, while pecans are shorter, almonds longer. Remove nuts from oven and keep warm.

Blend soda and salt. Set aside.

In 3 qt saucepan, combine sugar, corn syrup and water Bring to a boil. Boil rapidly until syrup begins to turn a golden color.

Add warm nuts and continue cooking, stirring often, until syrup is a clear gold color. Remove from heat.

Quickly stir in butter and soda/salt mixture. Immediately pour onto marble slabl or foil lined pan(s). Let cool completely.

Break apart into pieces and store in air tight container in a cool place.
