Ingredients

  • 3 cups raw nuts (peanuts, cashews, pecan, walnuts or almonds)
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1/4 cup butter, melted

Instructions

  1. Spread nuts onto baking pan to roast in oven at 350 degrees F. Note: Nuts roast at different times. Peanuts are typically 15 minutes, while pecans are shorter, almonds longer. Remove nuts from oven and keep warm.

  2. Blend soda and salt. Set aside.

  3. In 3 qt saucepan, combine sugar, corn syrup and water Bring to a boil. Boil rapidly until syrup begins to turn a golden color.

  4. Add warm nuts and continue cooking, stirring often, until syrup is a clear gold color. Remove from heat.

  5. Quickly stir in butter and soda/salt mixture. Immediately pour onto marble slabl or foil lined pan(s). Let cool completely.

  6. Break apart into pieces and store in air tight container in a cool place.
