Ingredients

  • 8 slices white bread
  • 7oz aged white cheddar
  • 2oz brie, rinds removed
  • 2 tablespoons dry white wine
  • 4 teaspoons minced shallot
  • 3 tablespoons unsalted butter, softened
  • a little bit of dijon mustard

Instructions

Cut cheddar into 24 bite-size cubes. Blend white cheddar, brie, and white wine in food processor. Add shallot, pulse to combine. Coat outside of bread with butter/mustard mixture. Spread cheese mixture on the inside.

Heat dry non-stick pan for 2 mins over medium heat.

Cook on medium low for 6-9 minutes. Flip and cook another 6 minutes. Allow to sit for 2 minutes before cutting/eating.

Makes 4 sandwiches.
